Homemade Oatmeal Cream Pies:

Prepare and bake Oatmeal Cookies as directed. For filling, in a medium mixing bowl combine 2 teaspoons hot water and 1/4 teaspoon salt, stirring until salt is dissolved. Add one 7-ounce jar marshmallow creme, 1/2 cup shortening, and 1/3 cup powdered sugar. Beat with an electric mixer on medium speed until combined. Spread filling onto bottoms of half of the Oatmeal Cookies. Top with the remaining cookies, bottom sides down.
